- CommentsEach tuber can be cut into several crowns, or knobs, and planted. Work a fertilizer with an NPK of 10-10-10 into the soil before planting at a rate of 1 1/2 to 2 lbs. per 100 square feet. With proper care, a tremendous yield is produced. Harvest: these artichokes can be left in the ground and dug as they are needed through the Winter, until the ground freezes. Trim the stalks back in the Fall as they begin to die. Trim back to 1 foot. Mulch the rows with a thick layer of straw or leaves after the 1st hard frost. Although freezing improves the flavor, you can dig the tubers in the Fall and store in sealed containers in the refrigerator or a cool area.
